Oreo Cheesecake Brownie

This might be one of my greatest creations — gooey brownie, creamy cheesecake filling, and Oreo cookies. Looks impressive, surprisingly easy.

Ingredients

Brownie base

  • 115g salted butter
  • 170g dark chocolate
  • 2 free-range eggs
  • 150g caster sugar
  • 1 tbsp vanilla extract
  • 1 tsp brewed coffee
  • Pinch of salt
  • 105g self-raising flour
  • 15 Oreo cookies

Cream cheese filling

  • 225g cream cheese
  • 70g icing sugar
  • 1/2 tsp vanilla extract

Method

Preheat oven to 180C. Melt butter and chocolate. Beat cream cheese with icing sugar and vanilla; set aside. Stir coffee and vanilla into chocolate, add eggs, sugar, salt, fold in flour. Break two-thirds of the Oreos into quarters and fold in.

Spread half the brownie into a lined 20cm tin. Add cream cheese layer. Top with remaining batter and Oreos. Bake 25-30 minutes.
