Peanut Butter Brookie

A cookie layer, a smooth peanut butter middle, and a fudgy brownie on top — the perfect chocolatey, nutty treat.

Ingredients

Cookie layer

  • 180g plain flour
  • 50g cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 100g caster sugar
  • 110g soft brown sugar
  • 115g unsalted butter
  • 80g smooth peanut butter
  • 1 tsp vanilla extract
  • 1 large egg

Middle layer

  • 150g smooth peanut butter

Brownie layer

  • 100g 70% dark chocolate
  • 85g butter
  • 130g caster sugar
  • 60g muscovado sugar
  • 1/2 tsp baking powder
  • 130g plain flour
  • 2 free-range eggs

Method

Preheat oven to 180C. Cream butter and sugars, beat in peanut butter, add egg and vanilla, fold in dry ingredients. Press into a lined 20cm tin.

Melt chocolate and butter, stir in sugars, cool, add eggs and dry ingredients.

Spread 150g peanut butter over cookie base, pour brownie on top. Bake 20-22 minutes. Tag with #bakingwithalana!
