Salted Caramel Cornflake Brownies

Salted caramel and chocolate brownies — a match made in heaven. Add a cornflake topping and you have the perfect salty/sweet combination. Here's how to make them.

Ingredients

Brownies

  • 115g salted butter
  • 170g dark chocolate
  • 2 free range eggs
  • 150g caster sugar
  • 1 tbsp vanilla extract
  • Pinch of salt
  • 105g self-raising flour

Topping

  • 480g caster sugar
  • 300ml double cream
  • 160g butter
  • 200g cornflakes
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Method

  1. Melt butter and chocolate in 30-second microwave intervals. Cool slightly.
  2. Combine vanilla and eggs; stir thoroughly. Add sugar and salt; mix. Fold in flour.
  3. Bake at 180C for 20-25 minutes until a light crust forms with a gooey centre.
  4. For caramel: melt sugar, add butter and cream, stir until thick. Add salt and vanilla; cook 5 more minutes.
  5. Pour caramel over cornflakes. Press onto cooled brownie. Set, then slice.
