Salted Caramel Cornflake Brownies

Salted caramel and chocolate brownies — a match made in heaven. Add a cornflake topping and you have the perfect salty/sweet combination. Here's how to make them.
Ingredients
Brownies
- 115g salted butter
- 170g dark chocolate
- 2 free range eggs
- 150g caster sugar
- 1 tbsp vanilla extract
- Pinch of salt
- 105g self-raising flour
Topping
- 480g caster sugar
- 300ml double cream
- 160g butter
- 200g cornflakes
- 1/2 tsp salt
- 1 tsp vanilla extract
Method
- Melt butter and chocolate in 30-second microwave intervals. Cool slightly.
- Combine vanilla and eggs; stir thoroughly. Add sugar and salt; mix. Fold in flour.
- Bake at 180C for 20-25 minutes until a light crust forms with a gooey centre.
- For caramel: melt sugar, add butter and cream, stir until thick. Add salt and vanilla; cook 5 more minutes.
- Pour caramel over cornflakes. Press onto cooled brownie. Set, then slice.
